Crispy, savoury, and surprisingly addictive!

These eggplant chips are the perfect guilt-free snack to satisfy your crunch cravings!

Ingredients:

1 large Eggplant

Good splash of Cobram Estate Extra Virgin Olive Oil (EVOO)

Sprinkle of Moroccan Seasoning

Method:

  • Preheat oven to 180°C.

  • Cut in half and slice up eggplant in long chip style size.

  • On a lined baking tray, lay out the eggplant flat.

  • Drizzle a good amount of olive oil and then sprinkle moroccan seasoning.

  • Cook for 30-40 minutes depending on how crispy you like them.

  • Enjoy hot or cold!


Tips: Great as a side dish or mixed through a salad for extra texture!
