Think cooking fish is tricky? Think again!

Wholesome, flavorful, and easy to make – this dish is perfect for a healthy and satisfying meal! Not to mention quick too!

Ingredients:

1 Red Onion
500g Mushrooms
1-2 tbsp Red Miso Paste
Good splash Cobram Estate EVOO
1-2 bunches Broccolini
2 handfuls Spinach
2 pieces skinless Barramundi (or fish of choice!)

Method:

  1. Start by dicing red onion and mushrooms.

  2. Heat a good glug of Cobram Estate EVOO in a pan and sauté the onion until caramelised.

  3. Add the diced mushrooms and cook through.

  4. Stir in miso paste, ensuring the onion and mushrooms are well coated.

  5. Add broccolini and pour in some boiling water to help it cook.

  6. Toss in a handful of spinach.

  7. Place Barramundi on top and coat it with the miso sauce.

  8. Cover with a lid to steam the fish and finish cooking the veggies.

  9. Once the fish is cooked (it should flake apart easily), serve and enjoy!


Tips: Save the leftovers for lunch or dinner the next day!
