Mini Muffins - Protein Choc Chip
Don’t know what to do with the leftover bananas?
Easy… here is a simple recipe sure to please the whole family.
Quick, Delicious and Nutritious.
This one can even by done in your airfryer!
Great for little ones to help cook too.
Ingredients:
4 Little Ripe Bananas or 2 Large Bananas
2 Egg or Egg Substitute
1/2 Cup Cobram Estate EVOO
1 Teaspoon of Vanilla Extract
1/2 Teaspoon Cinnamon
1/4 Teaspoon Nutmeg
1/2 Teaspoon Baking Powder
1/2 Cup Bubs Organic Ancient Grain Porridge or Oat flour
1/4 Cup of Protein Powder (We used Hemp Today)
1/4 Cup Almond Meal
2 Tablespoon of Choc Chips
Method:
Mash the banana, add the egg, vanilla extract and EVOO, then mix
Add dry ingredients, cinnamon, nutmeg, baking powder, ancient grain porridge or oat flour, protein powder and almond meal. mix gentle until just combined
Last stir through choc chips
Spoon into mini muffin baking tray
Cook in airfryer for 10-16 mins on 160degrees (exact time may vary depending on your airfryer
Test if cooked through with a skewer - it should not come out wet
Alternatively bake in preheated oven 180 degrees Celsius for 12-15 mins or until a skewer come out clean and it is slightly browned on the top
Tips:
Can be made in advance and kept in the fridge for up to a week. Great snack on the run or with a cup of tea. Delicious warmed in the microwave, to get that just baked sensation.
