Don’t know what to do with the leftover bananas?

Easy… here is a simple recipe sure to please the whole family.
Quick, Delicious and Nutritious.

This one can even by done in your airfryer!

Great for little ones to help cook too.


Ingredients:

4 Little Ripe Bananas or 2 Large Bananas

2 Egg or Egg Substitute

1/2 Cup Cobram Estate EVOO

1 Teaspoon of Vanilla Extract

1/2 Teaspoon Cinnamon

1/4 Teaspoon Nutmeg

1/2 Teaspoon Baking Powder

1/2 Cup Bubs Organic Ancient Grain Porridge or Oat flour

1/4 Cup of Protein Powder (We used Hemp Today)

1/4 Cup Almond Meal

2 Tablespoon of Choc Chips

Method:

  • Mash the banana, add the egg, vanilla extract and EVOO, then mix

  • Add dry ingredients, cinnamon, nutmeg, baking powder, ancient grain porridge or oat flour, protein powder and almond meal. mix gentle until just combined

  • Last stir through choc chips

  • Spoon into mini muffin baking tray

  • Cook in airfryer for 10-16 mins on 160degrees (exact time may vary depending on your airfryer

  • Test if cooked through with a skewer - it should not come out wet

  • Alternatively bake in preheated oven 180 degrees Celsius for 12-15 mins or until a skewer come out clean and it is slightly browned on the top

Tips:

Can be made in advance and kept in the fridge for up to a week. Great snack on the run or with a cup of tea. Delicious warmed in the microwave, to get that just baked sensation.
