The Easy All Rounder - No Cooking Required

Straight from the fridge or pantry… Absolutely no cooking needed to create this jam packed delicious superfood snack or meal. Rich in protein, Fibre and health gut nutrients. Give this a go when you're rushed and need something nutritious...

This recipe is perfect to make when you’re busy at work or having a lazy day. Try mixing up your tinned tuna flavours for endless variety. We love soy and ginger style.

Ingredients:

1/2 Cucumber chopped

1/2 Red Capsicum chopped

2-3 Pickled Onions (We like the Blue Banner Tasmanian ones)

Small Tin of Tuna

Small Tin of Four Bean Mix

Little Tomatoes Halved

Cobram Estate Extra Virgin Olive Oil - EVOO

Salt, Pepper

Optional Toppings: Fresh Herbs, Lemon Wedge


Method:

  • Chop the cucumber, tomatoes, capcisum and pickled onions and place them in a bowl

  • Drain the four bean mix and add to the bowl

  • Drain and add the tinned tuna

  • Mix well and add a good splash of Cobram Estate EVOO, then salt and pepper to your liking

  • Serve with a squeeze of lemon to give it some zing or some fresh herbs and enjoy

    Keeps well refrigerated for up to 3 days, you can even double or triple the recipe to have leftovers. It tastes great the next day when the flavours really blend together. Now their’s no reason why you can’t fuel you body with great nutrients and superfoods!
