Deep Dish Protein Pizza? So easy, you won’t believe it!

Protein rich using eggs and cottage cheese - you can also add in shredded chicken or other favourite pizza toppings to this base.

This recipe is also Low GI with minimal carbohydrates. It doesn’t stop there… we then have all the benefits of EVOO! Amazing for your skin and overall health, it decreases inflammation and is full of antioxidants. This is the Mediterranean way of good health.

Ingredients:

4 eggs

1 Zucchini 

5 little tomatoes

1 Simpson Pantry Low Carb Wrap

Cobram Estate Extra Virgin Olive Oil - EVOO

Salt, Pepper, Dried Herbs of Choice - Rosemary, Oregano 

Optional - Cottage Cheese

Method:

  • Preheat oven to 180 degree celsius fan forced.

  • Grate Zucchini.

  • Mix in a large bowl - Grated Zucchini, Eggs, Salt, and optional a few tablespoons of cottage cheese.

  • Heat a good splash of EVOO on a medium heat fry pan then place on the wrap.

  • Next pour on the egg mix and allow it to all heat up from the bottom.

  • Slice in half the small tomatoes and place on top, then sprinkle with pepper and herbs.

  • Transfer frypan into the oven and bake for 20-30 minutes depending on how crispy you like it.

  • Remove from the oven and allow to rest for at least 5 minutes.

  • Then you are ready to slide it out, slice it up and enjoy.

    Great food on the run. Keeps well refrigerated for up to 4 days. Perfect cold or hot.
