Protein Banana Bread
Super Simple Protein Banana for the whole family.
Easy to bake ahead of time and delicious as a breaky on the go or an afternoon snack. This recipes is packed with protein and fibre. No added sugar and can be tweaked to be all plant based. Full of healthy fibres for the gut and gluten free. It uses no wheat flour but still has a bread like texture.
Ingredients:
1 Ripe Banana
1 Egg or Egg Substitute
3/4 Cup Cobram Estate EVOO
1 Teaspoon of Vanilla Extract
A Pinch of Murray River Salt
1 Teaspoon Cinnamon
1/2 Cup Plain Yogurt
1/2 Teaspoon Baking Powder
1 Cup LSA Mix
2 Scoops of Protein Powder
1/2 Cup Almond Meal
Hemp seeds, Almond Flakes or Pepitas to Top
Method:
Mash the banana, add with egg and EVOO, then mix
Add yogurt, vanilla extract, salt and cinnamon, baking powder and mix well
Add in dry ingredients, LSA mix, protein powder, almond meal and combine
Line loaf pan with baking paper and scoop in batter mix spread evenly
Top with hemp seeds, almond flakes or pepitas
Bake in preheated oven 180 degrees Celsius for 50-60mins or until a skewer come out clean and it is slightly browned on the top
Tips:
Can be made in advance and kept in the fridge for up to a week. Also can be sliced into portions and frozen so you always have it ready to go. Can heat in a toaster or microwave. Delicious with a dollop of yogurt or just plain. Enjoy.
