Ingredients:

4 eggs
1 large zucchini grated
1/2 cups LSA mix (Linseeds, Sunflower Seeds, Almond)
Pinch of Murray River Salt
Dried oregano sprinkle
Dried Thyme Spinkle
Splash of Cobram Estate EVOO


Method:

  • Combine the Grated zucchini and Eggs

  • Mix in the LSA mix, salt and spices

  • Heat EVOO in pan

  • Pour in mix

  • Cook one side, flip then cook the other all on low to medium heat until cooked right through

    Can be stored refrigerated for 3-4 days. Perfect hot or cold.
