Who says you need to miss out on Mexican?

A family favourite and super easy. Quorn is a great alternative to regular mince meat being nutritionally superior. It has less fat and more fibre. It is also cheaper and tastes delicious. We love our burrito mince mix that is perfect for lunch or dinner. Try it with a squeeze of lime for that true mexican feel.

Ingredients:

1 packet of Quorn Meat-Free Mince

1 cup Corn Kernels

1 Purple Onion chopped

1 bunch of Asparagus chopped

2 Carrots chopped

1 little tin of Tomato Paste

Splash of Cobram Estate Extra Virgin Olive Oil - EVOO - Garlic Infused

1 packet of Mingle Taco Seasoning

Salt, Pepper

Iceberg Lettuce

Skewer to hold lettuce wraps in place


Method:

  • Chop onion and veggies

  • Heat a good glug of EVOO garlic infused in a fry pan

  • Saute onion and then chopped carrots and quorn meat-free mince with the taco seasoning

  • Continue to saute and mix, then add the tomato paste and seasoning

  • Once this is cooked, then add the corn kernels and asparagus at the end to heat through

  • Get your lettuce cups ready and scoop in the mince mix

  • Gentle roll up and use a skewer to hold in place

  • Enjoy hot or cold

    The mince mix keeps well refrigerated for up to 4 days, you can even double or triple the recipe to have leftovers. You can also enjoy the mince alone in a bowl or with baby spinach mixed through. It tastes great the next day when the flavours really blend together.
