The most delicious, hot breaky, easy enough to enjoy every day of the week!

Packed with protein from the lentils, mushrooms and vegan easy eggs. This is a vegan freindly hot meal that you can easily prepare in advance and enjoy for weeks to come. GIve it a go and fuel yourself with good energy for a super productive day.

Ingredients:

1 Onion

2 tablespoons Cobram Estate Extra Virgin Olive Oil

3 Zucchinis

Lots of Mushrooms

1 bag of Baby Spinach

1 tin of Lentils

1 tin of CHerry Tomatoes

3 tablespoons of Orgran Easy Egg Mix

Chinese 5 Spice

Murray River Salt to taste




Method:

  • Heat Cobram Estate extra virgin olive oil in a large pan, add diced onions, Chinese five spice, salt and sauté until onion is translucent

  • Dice Veggies, add to pan, continue to sauté on medium/high heat

  • Add tinned lentils, tinned tomatoes and mix

  • Then add baby spinach and heat through

  • Lastly mix easy egg with water until like a paste, pour over the veggie mix and cook until set then turn through evenly

  • Serve plain or on a piece of toast. (I also love it topped with a little smokey tabasco)

  • Refrigerate for up to a week, or can freeze in individual serves for literally months so you have a quick breaky ready to go in minutes


Tips: This is seriously a stable for any time of the day. Enjoy it breakfast, lunch or dinner. An easy way to freeze is in individual snap lock bags and then they can be heated in the microwave quickly for a nutrient dense meal.
